Nectarines with Cashew Cream
For 4 servings
Ingredients
2 Nectarines
Apple juice
2 tablespoons Clearspring malt rice syrup
3 heaped teaspoons cashew nut butter
½ pack silken tofu
¼ teaspoon vanilla (powder)
Method
- Wash nectarines and cut in half.
- Place in a pan & add approximately 1cm of apple juice & bring to the boil.
- Turn the heat down & gently simmer with a lid until soft. You can check the softness of the nectarines with a skewer.
- Add rice syrup over the nectarines (this should create a delicious syrup) and cook for 1 minute longer.
- Make the cashew cream by combining the cashew nut butter, silken tofu & vanilla. You can add rice syrup to the cashew cream if you would like it sweeter.
- Serve the nectarines in their syrup, with cashew cream on top!
